Dans l’un de ces ateliers, on pr\u00e9pare un d\u00e9licieux sorbet aux poires. \u00bb <\/span>450 g de poire m\u00fbre<\/span>
\n<\/span>\u00bb <\/span>50 g de jus de citron (1 citron)<\/span><\/span>
\n\u00bb <\/span>210 ml de cr\u00e8me (30% min.)

Pr\u00e9paration<\/div>\n

  1. Presser le citron et m\u00e9langer avec le sirop d’agave. \u00c9pluchez les poires et \u00e9crasez-les \u00e0 l’aide du coutea \u00e9toile du bamix\u00ae. Incorporez les poires au sirop. N’attendez pas trop longtemps pour que la poire ne brunisse pas.<\/li>\n
  2. Fouettez la cr\u00e8me en chantilly (\u00e0 l’aide du disque fouet) et incorporez-la \u00e0 la poire. Veillez \u00e0 ne pas battre trop longtemps pour ne pas transformer la cr\u00e8me en beurre. Verser imm\u00e9diatement dans la machine (\u00e0 glace) et laisser tourner pendant 60 minutes.<\/li>\n
  3. Lorsque la machine \u00e0 glace est pr\u00eate, versez la cr\u00e8me glac\u00e9e dans une bo\u00eete et laissez-la durcir au cong\u00e9lateur pendant encore une heure. Ce processus s’appelle la maturation.<\/li>\n<\/ol>\n
