Retirez la chair de homard des carapaces et mettez-la de c\u00f4t\u00e9. Cassez les carapaces en morceaux. Ins\u00e9rez le couteau hachoir dans le SliceSy<span style=\"font-weight: 400;\">\u00ae et hachez grossi\u00e8rement le c\u00e9leri, la carotte et l&rsquo;oignon. Faites chauffer l&rsquo;huile d&rsquo;olive dans une po\u00eale et ajoutez les carapaces de homard, le c\u00e9leri, la carotte et l&rsquo;oignon. Faites cuire pendant cinq minutes \u00e0 feu moyen-vif. Ajoutez la pur\u00e9e de tomates et faites cuire pendant quelques minutes. Hachez grossi\u00e8rement les tomates et faites-les \u00e9galement cuire bri\u00e8vement avec le reste de la pr\u00e9paration.<\/span><\/li>\n<li>Versez le cognac dans la po\u00eale et flambez. Utilisez \u00e0 cet effet une longue allumette ou un briquet et faites attention aux flammes. Laissez l&rsquo;alcool s&rsquo;\u00e9vaporer, puis ajoutez le fumet de homard, le vin blanc, le laurier, les grains de poivre noir, le zeste d&rsquo;orange et les branches de thym. Ajoutez \u00e9galement 500 ml d&rsquo;eau \u00e0 la soupe. Portez le tout \u00e0 \u00e9bullition et laissez mijoter doucement pendant 60 minutes.<\/li>\n<li>Versez la soupe dans une passoire fine et jetez les parties solides. Portez \u00e0 nouveau \u00e0 \u00e9bullition et r\u00e9duisez l\u00e9g\u00e8rement jusqu&rsquo;\u00e0 ce que la soupe ait l\u00e9g\u00e8rement \u00e9paissi. Ins\u00e9rez le couteau \u00e9toile sur le bamix<span style=\"font-weight: 400;\">\u00ae, ajoutez progressivement la cr\u00e8me et le beurre et mixez la soupe. Assaisonnez si besoin avec du sel et du poivre.<\/span><\/li>\n<li>Coupez la chair du homard en morceaux et r\u00e9chauffez-la bri\u00e8vement dans la soupe.
