Pr\u00e9parez le barbecue \u00e0 une temp\u00e9rature de 100\u00b0C. Assaisonnez g\u00e9n\u00e9reusement la viande avec du sel et du poivre. Faites cuire la noix de veau environ 50 minutes en cuisson indirecte, jusqu\u2019\u00e0 ce que la temp\u00e9rature \u00e0 c\u0153ur atteigne 52\u00b0C.<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Mettez l\u2019\u0153uf, l\u2019huile de tournesol, le vinaigre de vin blanc et la moutarde dans le grand verre doseur. Ins\u00e9rez le m\u00e9langeur sur le bamix\u00ae. Placez le bamix\u00ae au fond du gobelet et mixez \u00e0 la premi\u00e8re vitesse jusqu\u2019\u00e0 ce qu\u2019une masse \u00e9paisse se forme au fond. Passez ensuite \u00e0 la deuxi\u00e8me vitesse et remontez lentement en exer\u00e7ant une l\u00e9g\u00e8re pression. Mixez encore quelques fois de haut en bas pour bien incorporer toute l\u2019huile.<\/span><\/li>\n<li><span style=\"font-weight: 400;\">\u00c9gouttez le thon. Placez-le dans le petit verre doseur avec trois cuill\u00e8res \u00e0 soupe de mayonnaise fra\u00eeche, le jus d\u2019un demi-citron et les filets d\u2019anchois. Fixez le couteau \u00e9toile sur le bamix\u00ae et mixez jusqu\u2019\u00e0 obtention d\u2019une sauce lisse. Assaisonnez avec du sel et du poivre. R\u00e9servez la sauce au frais jusqu\u2019au moment de servir. Sortez la noix de veau du barbecue, laissez-la ti\u00e9dir, enveloppez-la dans du film alimentaire et placez-la au r\u00e9frig\u00e9rateur.<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Coupez la noix de veau en fines tranches r\u00e9guli\u00e8res et disposez-les sur un grand plat. Nappez de sauce au thon. Garnissez avec un peu de roquette et des c\u00e2pres-pommes.
