Mettez les \u00e9pluchures et les extr\u00e9mit\u00e9s dans une casserole, ajoutez le bouillon et portez \u00e0 \u00e9bullition. Baissez le feu et laissez infuser doucement pendant 20 minutes.<\/li>\n<li>Filtrez le bouillon et r\u00e9servez-le. Coupez la partie blanche du poireau en rondelles et lavez-les soigneusement. Faites fondre 30 g de beurre dans une casserole \u00e0 soupe et faites revenir le poireau \u00e0 feu doux pendant cinq minutes. Ajoutez la farine et laissez cuire bri\u00e8vement en remuant.<\/li>\n<li>Coupez les asperges en morceaux. Ajoutez le bouillon d\u2019asperges et les asperges, puis portez \u00e0 \u00e9bullition en remuant. Laissez mijoter la soupe pendant 20 minutes. Pendant ce temps, faites cuire l\u2019\u0153uf dur, rafra\u00eechissez-le sous l\u2019eau froide et \u00e9calez-le. Placez le couteau multifonction sur le bamix\u00ae. Ajoutez la cr\u00e8me et le reste du beurre, puis mixez la soupe jusqu\u2019\u00e0 obtenir une texture lisse.<\/li>\n<li>Ins\u00e9rez la lame hachoir dans le SliceSy\u00ae et hachez finement le jambon et l\u2019\u0153uf.
