Fixez le couteau \u00e0 viande sur le bamix\u00ae et hachez la viande jusqu&rsquo;\u00e0 obtenir une belle viande hach\u00e9e grossi\u00e8re. Veillez donc \u00e0 ne pas hacher trop longtemps.<\/li>\n<li>Ajoutez la chapelure, les \u00e9pices, l&rsquo;\u0153uf et un filet d&rsquo;huile d&rsquo;olive. M\u00e9langez bri\u00e8vement et assaisonnez avec du poivre et du sel. Formez de belles boulettes avec le m\u00e9lange et laissez-les raffermir 30 minutes au r\u00e9frig\u00e9rateur.<\/li>\n<li>Pr\u00e9parez entretemps la mayonnaise harissa. Mettez l&rsquo;huile de tournesol, la harissa, le miel, le vinaigre de vin blanc, le jus de citron et l&rsquo;\u0153uf dans le verre doseur. Placez le bamix\u00ae avec le m\u00e9langeur au fond et mettez en marche \u00e0 la premi\u00e8re vitesse. Laissez au fond jusqu&rsquo;\u00e0 ce qu&rsquo;une \u00e9mulsion \u00e9paisse se forme. Passez ensuite \u00e0 la deuxi\u00e8me vitesse et remontez lentement. Mixez encore quelques fois de haut en bas jusqu&rsquo;\u00e0 obtenir une mayonnaise onctueuse. Assaisonnez avec du poivre et du sel et \u00e9ventuellement un peu de harissa suppl\u00e9mentaire. R\u00e9servez la mayonnaise harissa au frais jusqu&rsquo;\u00e0 utilisation.<\/li>\n<li>Pr\u00e9parez le barbecue \u00e0 feu moyen-vif (180 degr\u00e9s) et placez une skillet (po\u00eale en fonte) sur la grille pour bien la faire chauffer. Ajoutez un filet d&rsquo;huile d&rsquo;olive et faites griller les boulettes d&rsquo;agneau dans la po\u00eale pendant environ huit \u00e0 dix minutes en les retournant de tous les c\u00f4t\u00e9s. Tournez-les r\u00e9guli\u00e8rement pour une coloration uniforme.<\/li>\n<li>R\u00e9partissez un peu de mayonnaise harissa sur un plat.
