Mettez-le dans une casserole \u00e0 feu moyen, ne m\u00e9langez plus et portez \u00e0 \u00e9bullition en laissant l&rsquo;aiguille du thermom\u00e8tre dans la casserole. Il est important qu&rsquo;il ne se forme pas de cristaux de sucre sur les bords de la casserole.<\/p>\n<p><span style=\"color: #e21f21;\">5 <\/span> Lorsque le sirop atteint 115\u00b0C, battez les blancs d\u2019oeufs dans un bol propre et sec. Les blancs d\u2019oeufs doivent devenir a\u00e9r\u00e9s et peuvent former de l\u00e9gers pics. Lorsque le sirop atteint 120\u00b0C, les blancs d\u2019oeufs sont probablement pr\u00eats eux aussi.<\/p>\n<p><span style=\"color: #e21f21;\">6 <\/span> Pour le sirop, m\u00e9langez le golden syrup avec le sucre et 120 ml d&rsquo;eau. Mettez-le dans une casserole \u00e0 feu moyen, ne m\u00e9langez plus et portez \u00e0 \u00e9bullition en laissant l&rsquo;aiguille du thermom\u00e8tre dans la casserole. Il est important qu&rsquo;il ne se forme pas de cristaux de sucre sur les bords de la casserole.<\/p>\n<p><span style=\"color: #e21f21;\">7 <\/span> R\u00e9glez le bamix \u00e0 sa position la plus basse et, tout en battant, versez le sirop chaud dans les blancs d&rsquo;oeufs en un mince filet. Faites-le couler le long du bord du bol, et surtout pas sur les batteurs. D&rsquo;abord, les blancs d\u2019oeufs deviendront un peu plats &#8211; n&rsquo;ayez pas peur, c&rsquo;est normal. Continuez \u00e0 battre. Lorsque tout le sirop est incorpor\u00e9, vous pouvez ajouter les feuilles de g\u00e9latine press\u00e9es une par une, jusqu&rsquo;\u00e0 ce qu&rsquo;elles soient fondues (ce qui est tr\u00e8s facile). Vous pouvez maintenant r\u00e9gler le bamix \u00e0 sa position la plus haute et continuer de battre jusqu&rsquo;\u00e0 ce que la masse ait tripl\u00e9 (ou m\u00eame l\u00e9g\u00e8rement plus). Elle doit \u00eatre tr\u00e8s brillante, \u00e9paisse et pleine. En raison du golden syrup, elle ne sera pas blanc brillant, mais d\u2019une jolie couleur claire.<\/p>\n<p><span style=\"color: #e21f21;\">8 <\/span> Versez le marshmallow dans le moule pr\u00e9par\u00e9, assurez-vous qu&rsquo;il arrive bien dans les coins et que le dessus soit relativement lisse. \u00c9talez une fine couche du m\u00e9lange de sucre glace et f\u00e9cule de ma\u00efs et laissez prendre \u00e0 temp\u00e9rature ambiante pendant minimum 4-5 heures, et de pr\u00e9f\u00e9rence toute une nuit.<\/p>\n<p><span style=\"color: #e21f21;\">9 <\/span> D\u00e9coupez ensuite en cubes de 2,5 x 2,5 cm (ou plus petits, ou plus grands. Vous pouvez \u00e9galement d\u00e9couper des formes \u00e0 l\u2019emporte-pi\u00e8ce).
